The white carrot is the pigment-free face of the carrot — a creamy white-to-ivory taproot with none of the orange beta-carotene, purple anthocyanin or yellow lutein of its coloured cousins. It eats mild and clean, gently sweet with a faintly earthy, almost celery-like edge, and is grown mainly as an heirloom curiosity and the pale anchor of rainbow bunches.
These cues are Carrot's, and hold across its varieties; where this one differs, its own page says so.
