Micro carrot is the cultivated carrot (Daucus carota subsp. sativus) harvested as a microgreen — a tiny seedling only a few centimetres tall, cut about two to four weeks after sowing once its first feathery true leaves appear. Eaten raw as a delicate garnish or salad green, it carries a concentrated, sweet-grassy carrot flavour with a faintly resinous, herbal edge.
These cues are Carrot's, and hold across its varieties; where this one differs, its own page says so.
