Cardamaro is an Italian wine-based amaro from Piedmont, distinctive for being built on cardoon and blessed thistle rather than the bitter roots and barks used in most amari. Bottled at around 17% ABV, it is gentle, savoury and nutty, with a soft, low-intensity bitterness that has made it a bartender's favourite.
