A capon is a young rooster (cockerel) that has been castrated and then fattened, yielding a large, heavy bird prized for its exceptionally tender, fine-grained and well-marbled meat. Milder and richer than ordinary chicken, it has been a luxury roasting fowl of European festive tables since antiquity.
