Canistel, also called egg fruit or yellow sapote, is the bright orange-yellow fruit of a small evergreen tree (Pouteria campechiana) native to southern Mexico and Central America. When ripe its flesh is unusually dry, dense and pasty — sweet, mild and faintly musky, with a texture and colour so like a cooked egg yolk that it is best eaten with a spoon or whipped into custards.
