Camembert is a soft, bloomy-rind cow's-milk cheese from Normandy in northern France, sold in its signature small round wheel. Beneath a downy, edible white rind the pale ivory paste ripens from the outside in, softening from chalky and firm when young to supple, oozing and almost spoonable when fully mature. Its flavour is rich, buttery and savoury, with a distinctive mushroomy, earthy depth. It is eaten on bread, baked whole until molten, and married with apple, walnut, fig and honey.
