Calcium chloride

CaCl₂ · Modernist salt

Calcium chloride is the setting salt of basic spherification: dissolved in water it makes the calcium bath that turns an alginate liquid into spheres. It is also the firming agent that keeps pickles and canned vegetables crisp and is used in some cheese-making.

Application is a Pro feature

PAIR's modernist science — how much to use, how it behaves with heat, and what makes it fail — is a Pro feature. The description, nutrition, history and facts stay free.
