Café au Lait

Café au lait is the classic French coffee-with-milk: brewed coffee combined with a roughly equal measure of hot, often scalded, milk. The name is French for "coffee with milk", and the defining ratio is close to one-to-one, so the cup reads as mellow, milky and rounded rather than sharply bitter. Traditionally it is made from ordinary brewed coffee — dripped, pressed or from a pot — rather than from espresso, and in its home setting it is served in a wide bowl or a large cup at breakfast, made for dunking bread, croissants or tartines. It is the everyday French cousin of the Italian caffè latte and the Spanish café con leche, sharing their gentle, dairy-softened character.

A café au lait reads as warm milk and coffee in near-equal balance — creamy and lightly sweet from the dairy fat and lactose, carrying a clear but softened wave of roasted, gently toasty coffee. The one-to-one ratio keeps it more coffee-forward than a latte, so the brew's bitterness and roast come through more plainly, rounded rather than masked by the milk. The body is smooth and full without a foam cap, and a scalded-milk version adds a faint cooked-milk warmth; the New Orleans chicory style deepens the cup with a woody, roasted, faintly bitter note.
