Caerphilly is a hard, crumbly cow's-milk cheese — pale ivory-white, dense yet friable, with a fresh, faintly lemony tang and a clean, lightly saline finish. Named for the town of Caerphilly in south Wales, it began as a fast-maturing cheese for coal miners and is today Wales's best-known traditional cheese.
