Butterfly pea is the vivid deep-blue flower of Clitoria ternatea, a tropical climbing legume of Southeast Asia, dried and steeped to make a striking azure-blue caffeine-free herbal tea. Almost flavourless on its own — faintly earthy and pea-like — it is prized above all for its colour, which turns from blue to purple to pink when acid such as lemon juice is added.
