Butterfish (Peprilus triacanthus), also called American butterfish, dollarfish or Atlantic harvestfish, is a small, deep-bodied silver fish of the western North Atlantic. Its name comes from soft, oil-rich flesh that turns buttery and tender when cooked, and the whole fish is small enough to pan-fry, grill or broil bone-in.
