European-style butter is cultured, higher-fat butter — cream ripened with lactic-acid bacteria before churning, then worked to 82–86% milkfat rather than the 80% legal minimum of standard American butter. The fermentation and the extra fat give it a tangier, more complex flavour, a deeper gold colour and a firmer, more pliable body that laminates into flakier croissants and puff pastry. Named benchmarks — Plugrá, Kerrygold, Échiré and the French AOP butters of Isigny and Charentes-Poitou — set the standard for premium butter.
These cues are Butter's, and hold across its varieties; where this one differs, its own page says so.
