Bubble Tea

Bubble tea — also called boba, pearl milk tea or simply boba tea — is a cold, sweetened Taiwanese tea drink built on brewed black or green tea, milk or a non-dairy creamer, and a layer of chewy tapioca pearls that sit at the bottom of the cup. Served iced and drunk through a wide straw so the pearls can be sucked up and chewed, it is at once a beverage and a snack, and has grown from a 1980s Taichung novelty into a global café phenomenon.

A cold milk tea with pearls reads first as brisk, tannic black tea softened by creamy milk and a wash of brown-sugar caramel, malty and lightly roasted; it is frankly sweet with a gentle tea bitterness underneath, and the pleasure is as much texture as taste — the springy, faintly sweet chew of syrup-soaked tapioca pulled up through a fat straw between sips of chilled, frothy tea.
