Brukina

Brukina, also spelled burkina, is a cool, creamy, gently soured drink from Ghana made by folding cooked, dried and ground pearl-millet grits into sweetened, often lightly fermented cow's milk. Named for and associated with migrants from Burkina Faso, it is a thick, sippable milk drink carrying a scatter of tiny cooked-millet pearls that give it a faint chew, mild grain flavour and satisfying, semi-solid body. Sold ice-cold from coolers and street carts across Accra and the Ghanaian south, it sits somewhere between a drink, a light meal and a dessert.

A cold glass of brukina leads with sweet, creamy fresh milk carrying a gentle yoghurt-like tang, threaded with the soft, faintly nutty flavour of cooked pearl millet; the little grain pearls give a mild chew against the thick, spoonable milk body, and the finish is milky and lightly grain-sweet with just a whisper of vanilla or nutmeg in richer versions rather than any sharpness.
