Brie is a soft, surface-ripened cow's-milk cheese cloaked in a downy white bloomy rind, with a pale, supple paste that turns increasingly creamy, oozing and buttery as it matures from the rind inward. Named for the historic Brie region east of Paris, it is one of France's most famous cheeses and an archetype of the bloomy-rind style served worldwide.
