Brick cheese is a semi-soft, cow's-milk cheese of American (Wisconsin) origin, named both for the brick shape it is pressed into and for the bricks once stacked on the curd to press it. It spans a wide range: mild, sweet and Muenster-like when young, it ripens into a pungent, sharp, washed-rind cheese with the funky aroma of its cousin Limburger.
