Bratwurst is a German fresh sausage, traditionally of finely ground pork (often with veal or beef) seasoned with mild warm spices and packed into a natural casing. Pale, plump and uncooked from the butcher, it is grilled, pan-fried or simmered until juicy and lightly browned — the centrepiece of the German grill, the Christmas market and the football-stadium snack stand.
