Bourbon
Bourbon is America's signature whiskey: a corn-led grain spirit, made from a mash of at least 51 percent corn and matured in new charred oak barrels that give it its deep amber-red colour and its sweet, full, rounded character. Where Scotch leans dry and smoky, bourbon is unmistakably sweeter and softer, layered with vanilla, caramel, toffee, brown sugar, charred oak and a warming lick of baking spice.

Warm, sweet and full-bodied, deep amber-red in the glass with a soft, rounded mouthfeel and a long, spice-laced finish. New charred oak gives sweet vanilla, caramel and toffee with toasted, charred wood, while corn lends a mellow grain sweetness and the secondary grain a peppery cinnamon-clove lift; dried fruit, brown sugar and a gentle smoky char round it out. At around 40 to 50 percent ABV the alcohol carries real warmth and pungency under the sweetness.
