Boerewors is a thick, coarse-textured South African fresh sausage of beef (usually mixed with pork or lamb and fat) seasoned above all with toasted, coarsely ground coriander seed. Sold wound into a flat spiral coil, it is the indispensable centrepiece of the braai — the South African barbecue — grilled whole over wood or charcoal until browned and juicy.
