Bocconcini are small, bite-sized balls of fresh mozzarella, the name meaning "little mouthfuls" in Italian. Soft, springy and milky-sweet, they are sold floating in light brine or whey and eaten fresh — speared on antipasto skewers, tossed whole into salads, or scattered over pizza and pasta.
