Bluefish is the rich, oily, strong-flavoured flesh of Pomatomus saltatrix, a fast, voracious schooling predator of temperate and subtropical seas and the only living member of its family, Pomatomidae. Greyish-blue across the back and silvery below, it yields a soft, deeply savoury grey-blue raw meat that firms and pales when cooked, prized for its bold, almost meaty flavour but notorious for turning sharply "fishy" if not handled cold and eaten fresh.
