The Bloody Mary is a savoury vodka cocktail built on tomato juice and seasoned like a dish rather than a drink — lemon, Worcestershire sauce, hot sauce, celery salt, black pepper and often horseradish, stirred over ice and served tall in a highball glass with a stalk of celery and a wedge of lemon. It is thick, tart and spicy, deep red and almost food-like, and is one of the few great classics drunk chiefly in the morning — the canonical brunch cocktail and the archetypal "hair of the dog" for a hangover. Where most cocktails are sweet or sour, the Bloody Mary is umami and peppery, a glass that eats almost like a chilled, boozy gazpacho.
