Bison is the meat of the American bison (Bison bison), the great shaggy grazer often called the American buffalo. It is a lean, deep-red, fine-grained red meat that eats much like beef but is leaner, more tender and a touch sweeter and cleaner in flavour, central to the foodways of the Plains Indigenous nations and today raised on ranches across North America.
