Birch Beer

Birch beer is a North American carbonated soft drink flavoured with the bark, twigs or sap of the birch tree, whose oil carries a bright, minty-sweet, wintergreen-like note close to but distinct from sarsaparilla. Sweet, deeply aromatic and closely related to root beer, it is a regional soda of the northeastern United States — most often non-alcoholic, and in its ordinary form vegan.

A cold birch beer opens with a bright, cool wintergreen lift — the minty-medicinal snap of methyl salicylate — over a sweet, woody birch base that reads as a fresher, sharper relative of root beer; the palate is frankly sweet and lightly carbonated, with a faint bitter-aromatic edge and a clean, penetrating finish rather than the vanilla-anise roundness of root beer.
