Biltong is a South African dried, cured meat — most often beef (Bos taurus), though game such as kudu, springbok, ostrich and other meats are also used. Strips of meat are cured in vinegar and salt with coriander and pepper, then hung to air-dry without smoke or heat, giving a dark, dense, deeply savoury snack eaten in thin slices or chunks.
