Between the Sheets
Between the Sheets is a tart, boozy Prohibition-era classic — equal parts cognac, white rum and triple sec brightened with fresh lemon juice, shaken hard over ice and strained up into a coupe with a lemon twist. Pale gold and citrus-forward, it is essentially a Sidecar with a shot of rum added, a stiff sour that drinks lighter than it is.

Pale gold and faintly cloudy, Between the Sheets smells of bright fresh lemon and sweet orange liqueur lifted by the grapey warmth of cognac and a light, faintly sugary white rum. On the palate it is tart and citrus-forward — a sharp lemon acidity balanced by the orange sweetness of the triple sec — over a warm, spirituous base of cognac and rum, finishing dry, crisp and boozy at around 27 percent alcohol in the glass. The expressed lemon twist adds a final burst of fragrant citrus oil.
