The Bellini is a sparkling Italian aperitif of just two ingredients — chilled dry Prosecco and fresh white-peach purée — poured into a flute and stirred gently so the bubbles survive. It was invented at Harry's Bar in Venice by the founder Giuseppe Cipriani, who named it for the soft pink-gold colour of a saint's robe in a painting by the fifteenth-century Venetian master Giovanni Bellini. Pale peach in the glass, lightly frothy and delicately fruity, it is a gentle, low-strength sparkler rather than a spirit-forward drink. Originally a seasonal speciality tied to the brief white-peach harvest, it became a signature of Harry's Bar and one of the most recognisable Italian cocktails in the world.
