Sour ale is the umbrella name for beers deliberately soured to a bright, tart, acidic character — from clean, quick "kettle sours" tanged with Lactobacillus to the complex, funky wild ales fermented with Brettanomyces and mixed cultures — usually light-bodied, modest in strength and often finished with fruit.
