Bière de Garde is the malty French cousin of saison — a strong "keeping beer" from the Nord-Pas-de-Calais farms across the border from Wallonia. Where saison is dry, peppery and yeast-driven, bière de garde is rounder, toasty and smooth: a copper-to-gold farmhouse ale built on rich malt, gently fruity, lightly carbonated and warming, traditionally cellared in cork-finished bottles to be drunk later in the year.
