Lambic is a Belgian wheat beer made by spontaneous fermentation — cooled in open air and inoculated by the wild yeasts and bacteria of the Zenne valley around Brussels, then aged in oak — giving a dry, tart, cidery beer with a distinctive funky, barnyard character quite unlike any conventional beer.
