Fruit lambic is the broad family of Belgian sour lambics refermented on fruit other than the classic sour cherry — above all raspberry (framboise) and blackcurrant (cassis), but also peach, apricot, grape and plum — turning the austere wild-fermented base a jewel-bright colour that is tart, dry and shot through with fresh fruit and barnyard funk.
