Eisbock ("ice bock") is the freeze-concentrated extreme of the German bock family — a Doppelbock partly frozen so that water crystals can be removed, leaving a darker, denser, hugely rich and warming lager that runs roughly 9 to 14 percent alcohol and pours deep chestnut to near-black with ruby glints, syrupy-sweet with concentrated caramel, toffee and dark dried fruit.
