Beef tongue

Beef tongue is the muscular tongue of cattle (Bos taurus), an offal cut prized for its rich, deeply beefy flavour and uniquely fine, tender texture once cooked. Long-simmered or braised until the rough outer skin peels away, it slices into smooth, almost buttery meat that turns up in dishes from Mexican tacos de lengua to Jewish deli tongue and Japanese gyūtan.
