The ribeye is a steak cut from the rib primal of beef (Bos taurus), centred on the longissimus dorsi muscle that runs along the back. Heavily marbled with intramuscular fat, it is prized as one of the richest, most tender and most flavourful of the classic steaks, eaten grilled, pan-seared or roasted.
