Beef liver is the edible liver of domestic cattle (Bos taurus), the largest of the common offal organs and among the most nutrient-dense foods eaten anywhere. Deep red-brown, firm and smooth-grained, it has a soft, slightly grainy texture and a pronounced minerally, faintly metallic flavour that sharpens when overcooked.
