Jersey is the Channel Islands dairy breed, and the yellow-fat breed. A Jersey clears carotene out of its body poorly, so it accumulates in the fat instead — deep buttercup yellow where another breed on the same feed would be pale cream — and it tastes the way it looks: rich, dairy-like, almost cultured. The carcass is small and the eye of meat modest, and most Jersey beef reaches diners as ex-dairy steak: a cow retired from the milking parlour, put back out on grass to fatten, and hung for weeks, which gives an intensely savoury, nearly cheesy result.
These cues are Beef's, and hold across its varieties; where this one differs, its own page says so.
