Holstein is the black-and-white dairy cow, and quietly one of the largest sources of beef there is: most veal, a great deal of ground beef, and — the biggest share of all — fed dairy steers. It eats mild, fine-grained and tender, off a carcass with more bone and less fat cover than a beef breed carries, and a smaller eye of meat.
