Beef cheek is the facial muscle of cattle (Bos taurus) — the masseter and surrounding cheek tissue that powers chewing. Extremely hard-working and laced with connective tissue, it is a tough, deeply flavoured cut prized for long, slow braising, which melts its collagen into a silky, gelatinous richness.
