Brisket is the breast of the steer — a large, boneless cut taken from the lower chest, below the chuck and in front of the foreshank. Heavily worked and threaded with connective tissue and fat, it is one of beef's toughest cuts raw, yet turns meltingly tender after long, slow cooking, making it the classic muscle for barbecue, pastrami, corned beef and pot roast.
