Batavia arrack is a traditional Indonesian spirit distilled on the island of Java from fermented sugarcane molasses, uniquely inoculated with cakes of dried red rice whose wild yeasts and moulds give the spirit its signature dry, funky, high-ester character. Pungent, smoky and almost hogo-heavy in the way of the most characterful rums, it is not a sipping spirit for most palates but a formidable base and blending component, and it was the beating heart of the great arrack punches of eighteenth-century Europe and of Swedish punsch. It belongs to the wider arrack family of Asian distillates but should not be confused with the anise-flavoured arak of the Middle East, which is a wholly different drink.
