Batanga

The Batanga is the Tequila-and-cola highball of Tequila, Mexico — a generous pour of blanco or reposado tequila lengthened with cola and fresh lime, built over ice in a tall salt-rimmed glass and stirred, famously, with a long kitchen knife. Easy, thirst-quenching and around 12 percent alcohol in the glass, it is the house drink of La Capilla, the legendary cantina in the town of Tequila, and a Mexican cousin to the Cuba Libre.

Long and amber over ice, the Batanga smells of fresh-cut lime and caramel-sweet cola with the peppery, faintly vegetal lift of agave tequila underneath and a saline edge from the rim. On the palate it is fizzy and easy — cola sweetness and vanilla-caramel against the earthy, black-peppery agave, tart lime cutting through the middle, and a savoury salted-rim note bracketing every sip. It finishes clean and refreshing with a gentle warmth, drinking at an easy highball strength of about 12 percent alcohol in the glass — a soft-drink-simple pleasure with a real spirit backbone.
