Barfi (also spelt barfee, burfi or borfi) is a dense, fudge-like Indian sweet made by cooking milk solids and sugar to a soft, sliceable mass and cutting it into squares or diamonds. The plain milk version is the template, but the name covers a large family of variants flavoured and coloured with pistachio, cashew, coconut, chocolate, fruit or spice.
