Bandrek

Bandrek is the hot spiced ginger drink of the Sundanese people of West Java, Indonesia — fresh ginger simmered with palm sugar and warming spices until it is deep amber, sweet, and fiercely warming in the throat. It is the classic drink of the cool volcanic highlands around Bandung, sold from street carts on chilly evenings and pressed on anyone with a cough or a chill. The ginger gives a clean burning pungency, the aren (palm) sugar a dark caramel-molasses sweetness, and additions of cinnamon, clove, lemongrass and a knot of pandan build an aromatic, almost mulled-wine warmth. It is non-alcoholic, caffeine-free, and closely related to the wider Indonesian wedang jahe (plain hot ginger water) — bandrek is simply its richer, more heavily spiced Sundanese cousin.

A scalding glass of bandrek reads first as pungent fresh ginger and warm mulling spice — cinnamon and clove over a base of dark, molasses-scented palm-sugar caramel — with a green-citrus lift of lemongrass and pandan behind. On the palate it is roundly sweet and frankly hot, the ginger's clean burn building in the throat, faintly bitter-spicy at the edges; a spoonful of shredded young coconut adds soft texture and a little condensed or coconut milk, when used, rounds the burn into something creamier and gentler.
