Cocktail
Bamboo
The Bamboo is a light, low-alcohol classic built in equal parts from dry (fino) sherry and dry vermouth, seasoned with a couple of dashes of bitters, stirred over ice and served up. Pale gold and bone-dry, it is one of the original "sherry cocktails" — a delicate, savoury aperitif of roughly 17 percent alcohol that whets the appetite without the weight of a spirit-forward drink.

Herbal
Pale straw-gold, the Bamboo smells of briny fino sherry — almond, chamomile and a faint yeasty tang from its flor ageing — layered over the wormwood and dried-herb aromatics of dry vermouth, with a warm spiced-orange lift from the bitters and a bright citrus-oil edge from the lemon twist. On the palate it is bone-dry and gently saline, crisp and savoury, with a nutty, wine-driven mid-palate, a whisper of bitter-herb depth and a clean, delicate finish at around 17 percent alcohol in the glass — light and appetite-sharpening rather than heavy or hot.
