Bajra is pearl millet, the largest-grained and most widely grown of the millets — a tall, drought-hardy African cereal grass whose dense, candle-like seed spike yields small round kernels in shades of grey, slate-blue, white or yellow. Naturally gluten-free and faintly nutty with an earthy, slightly mineral edge, it is ground into the dark, hearty flour of bajra roti, the staple winter flatbread of western India, and is the daily bread grain of the African Sahel.
