Badam milk

Badam milk, also called badam doodh, is a rich South Asian almond drink made by simmering whole milk with a smooth paste of ground blanched almonds, sugar, green cardamom and saffron, often finished with slivered pistachios. The result is creamy, faintly nutty and perfumed, pale gold from the saffron, and equally at home served piping hot on a cold night or chilled over ice in summer. Unlike Western almond milk it is unambiguously a dairy drink — the almonds thicken and flavour cow's milk rather than replacing it. It is a comforting everyday treat across India and Pakistan and a small luxury at weddings and festivals.

Warm badam milk reads first as toasty ground almond over a creamy full-fat milk body, lifted by the warm, slightly citrussy perfume of green cardamom and the floral, honeyed note of saffron; the taste is gently sweet and softly fatty with a faint savoury depth from the nuts, and the texture is smooth and lightly thickened rather than thin.
