Bacanora

Bacanora is a Mexican agave spirit from the mountains of Sonora in the north- west, distilled from the roasted hearts of the wild Agave angustifolia, the Agave Pacifica, into a smoky, earthy and mineral spirit that is a close cousin of mezcal; outlawed for most of the twentieth century and only legalised in 1992, it is now a protected Denominacion de Origen made largely by small highland producers and usually bottled unaged at around 38 to 55 percent.

Smoky and earthy with a mineral, almost flinty edge, bacanora leads with mesquite campfire smoke and roasted, caramelised agave over green herbal and vegetal notes, wet stone and a lift of citrus and floral high tones. The texture is dry and spirituous with a warming alcohol burn that can run from a soft 38 percent up to a fierce 55, lighter and more mineral than the heavier smoked mezcales of Oaxaca, and the finish is long, smoky and earthy with a peppery, cooked-agave sweetness that lingers.
