Zutano is a thin-skinned, pear-shaped green avocado with smooth, glossy, slightly shiny yellow-green skin that stays green when ripe — never blackening like Hass. Its pale, light-green flesh is watery and mild, lower in oil than Hass or even Fuerte, with a clean, faintly grassy taste rather than a deep buttery richness. A very cold-hardy Mexican-race cultivar, it is grown more as a hardy garden tree and as a Hass pollinizer than as a premium eating avocado.
