The avocado is the large, single-seeded berry of Persea americana, an evergreen tree of the laurel family native to south-central Mexico. Prized for its buttery, pale-green flesh, it is unusual among fruits in being rich in fat rather than sugar — barely sweet, faintly grassy and nutty, with a smooth, spreadable richness that makes it as much a vegetable in the kitchen as a fruit.
