Aviation

The Aviation is a gin sour of the Prohibition era — gin, maraschino liqueur, crème de violette and fresh lemon juice, shaken hard with ice and strained cold into a stemmed cocktail glass. It is a tart, aromatic, faintly floral drink whose name and pale sky-violet tint evoke the early age of flight. One of the great pre-Prohibition classics, it was first written down by Hugo Ensslin in 1916, then nearly lost when the rare violet liqueur fell out of supply — and revived in the 2000s when crème de violette returned to the market.

26% ABV
A pale sky-violet shaken sour of roughly 25 to 30 percent alcohol, tart-led and bright with fresh lemon, framed by the dry juniper of gin and the nutty, faintly bitter cherry-pit note of maraschino. A small measure of crème de violette adds a soft floral perfume and the signature lavender colour without much sweetness; the whole drink is crisp, aromatic and dry, finishing on violet and lemon rather than sugar.
